Our Story
Sparkblumen is a small café and bakery that decided the Pretoria neighbourhood it serves deserved genuinely good food and coffee.
Sparkblumen opened in October 2019 in a converted double-volume space on Bronkhorst Street in Brooklyn, Pretoria. The name — a hybrid of the German word for spark and the Afrikaans word for flowers — was chosen to reflect the dual identity of the city: the formality of its civic character and the warmth of its neighbourhood streets. The founders, a pastry chef and a specialty-coffee enthusiast who met while working in Cape Town's coffee scene, returned to Pretoria with a single intention: to build the kind of café they had always wanted to find walking distance from home. In the five years since opening, Sparkblumen has served more than 80,000 guests, developed a wholesale bread account with two local delis, and earned a following among Pretoria's professional and creative communities. The café seats 34 guests across an indoor area and a small courtyard shaded by a mature fig tree. The interior's coral-energetic palette — warm terracotta tile, coral-painted joinery, and textured cream plaster — was designed by a Johannesburg studio and completed in a single renovation weekend before we opened.
Sparkblumen runs a kitchen team of four and a floor team of three. Our head baker begins at 04:30 each morning; the first espresso pull happens at 06:55, five minutes before doors open. Every item on the pastry counter was produced that morning — we do not hold yesterday's bakes for the next day, and we do not use a central commissary. When items sell out, they sell out. This policy means some mornings the kouign-amann is gone by 09:00; it also means what you do receive is at its absolute best. We source our coffee through a single-origin programme with a Johannesburg roaster and update the bean roughly every six weeks. Bread follows a 36-hour fermentation schedule; we will not shorten it to increase volume. Lunches are prepared fresh from 10:00 for an 11:30 service. We do not pretend to be all things: we do not do wedding cakes, catering for large events, or full cooked breakfasts. Our scope is deliberate and small, which is what allows us to maintain the standard we set in 2019.

Every sourdough loaf at Sparkblumen follows a 36-hour cold-fermentation schedule. We have never shortened it to meet demand, and we do not intend to. The flavour and crust structure it produces is simply not achievable in less time.
Two Pretoria delis now carry our seeded rye and sourdough loaves. These accounts grew from customers who first encountered the bread at our counter and wanted it available closer to their own kitchens.
Our espresso programme changes bean every six weeks through a direct relationship with a Johannesburg specialty roaster. We have featured farms in Ethiopia, Colombia, Burundi, and Rwanda since 2019.
